Roasted Butternut Squash Soup Topped with Nana Joes Granola (Recipe)
Get into a warm, delightful bowl of creamy roasted butternut squash soup topped with fresh herbs of your choice and a sprinkle of granola for a bit of crunch.
Prep Time 15 mins; Cook Time 45 mins; Serves 2-3
Ingredients:
- 1 medium butternut squash, peeled & cubed
- 2 tbsp olive oil
- 1 cup vegetable broth
- Salt to taste
- Paleo Orange Almond Butter Granola
- Fresh herbs of your choice (rosemary & thyme)
Instructions:
- Preheat oven to 425°F (220°C).
- Roast peeled and cubed squash on a baking sheet for 45 mins or until tender.
- Scoop flesh into a blender; add olive oil and vegetable broth. Blend until smooth.
- Season with salt; adjust thickness with more broth if needed.
